Vineyards & Vintage Conditions
The Chardonnay grapes are sourced from the Riverland region in South Australia, specifically from the Barmara vineyard, where the vines are 30 years old. The vineyard is certified Organic and Biodynamic, with mallee soils consisting of deep sand over lime and clay.
Winemaking Process
The grapes were harvested in mid-February at 11 Baume and a pH of 3.30. They were quickly crushed, pressed, and settled overnight before fermentation commenced. The wine fermented for three weeks at cool temperatures of 14°C, underwent malolactic fermentation, and had brief French oak contact before being cold and heat stabilized and bottled in mid-April 2021.
